HOW TO MAKE YOGHURT SO FAST

yoghurt is one of the most nutritious foods . it caontains all the great minerals that can help one live a good a life.

among the importances of yoghurt is the pressence of probiotic bacteria  that help improve on digestion.
some of the importances of yoghurt include, improving digestion,protects against osteoporosis,benefits heart health, improves bone health,promotes weight management,


HOWEVER , YOGHURT MAY NOT BE FOR EVERYONE,


This is because of what we call, Lactose Intolerance.
Quickly, lets look at how yoghurt is made.


REQUIREMENTS

  1. milk
  2.  A double jacket saucepan
  3.  sugar (optional)
  4. Flavors (include straw berry, vanilla, mango, pineapple etc.)
  5.  Stabilizers
  6. Culture/mother culture/another already formed yoghurt.
  7.  stirrer
  8.  Source of heat
  9.  Thermometer (food grade)
  10.  Packaging materials (these may be poaches or bottles or tetra packs)

PROCEDURES


  1.  Test the milk for its quality. (you can use plat form tests , simple lab tests and any that may be easyfor you.)
  2.  Sieve/strain it into the inner saucepan
  3.  Heat up to 60oc to 70oc
  4. Add sugar and stabilizer’s at this temperature while stirring
  5.  Heat further up to 80oc and pasteurize/hold the temperature for 30 minutes or at 85oc for 15minutes
  6.  Cool the milk-sugar-stabilizer mixture up to 45oc
  7.  Add culture to it or mother culture / already formed yoghurt.
  8. Cover the cultured milk (leave a breathing space) and incubate for 5 hours at 45oc or for 12 hours atroom temperature
  9. After the incubation time…… you have your yoghurt……..but one more step to go
  10.  Remove the cream layer on the top (breaking the yoghurt).
  11.  Add your favorite flavor and stir properly
  12.  You can preservatives (potassium sobate and natamycine are common) if you wish or not
  13.  Pack and keep at 4oc for 3 weeks

KEY NOTES 
in adition to the keynotes aside, ensure proper hygiene throught the process, otherwise, yoghurt may fail to make or it may make but get spoilt so fast
